TRS Dalchini (Cinnamon Sticks) are whole cinnamon bark pieces prized for their warm, sweet and slightly woody aroma and flavour. Each stick consists of tightly rolled layers of brown bark that release fragrant essential oils when crushed, toasted or simmered. This versatile spice is widely used across Indian and international kitchens to add depth to savoury dishes such as curries, biryanis and stews, as well as to sweet preparations like desserts, puddings and baked goods. Whole cinnamon sticks also make a fragrant addition to hot beverages and infusions, and because they are sold whole rather than ground they retain their aroma and flavour for much longer when stored correctly.

To use, add a whole stick to hot oil at the start of cooking for curries and rice dishes to gently infuse the dish, or drop a stick into simmering milk or water for 5–15 minutes to make spiced tea, chai or dessert bases before removing and serving. For baking or recipes that call for ground cinnamon, break the stick into smaller pieces and grind it in a spice grinder or mortar and pestle. Lightly toasting the sticks in a dry pan for a minute or two will intensify their flavour. After infusing, remove the whole stick before serving and store unused sticks in an airtight container in a cool, dry place away from direct sunlight.
