Shan Pav Bhaji is a ready-to-use spice mix designed to recreate the bold, tangy, and mildly smoky flavors of Mumbai street-style pav bhaji at home. The blend combines a balanced mix of traditional Indian spices and seasonings to give a rich, well-rounded taste and vibrant color to the bhaji without the need to measure multiple spices. It is meant to simplify cooking and deliver consistent, restaurant-style flavor quickly and conveniently, making it easy for home cooks to prepare a classic pav bhaji with minimal effort.

To use, boil or pressure-cook potatoes and mixed vegetables until tender, then roughly mash and set aside. In a pan, heat oil or butter and sauté finely chopped onions, green chili and bell pepper until softened, then add chopped tomatoes and cook until pulpy. Add the mashed vegetables to the pan, sprinkle in the Shan Pav Bhaji spice mix and stir, adding a little water as needed to reach a thick gravy consistency. Simmer for a few minutes, mash further with a potato masher for the desired texture, finish with a knob of butter and a squeeze of lemon to taste, garnish with chopped coriander and serve hot with buttered and toasted pav or bread.
