Fry sliced onions in oil until golden, add the marinated beef and sauté until browned, then add water and cook the meat until tender. Meanwhile parboil basmati rice until about 70% cooked, then layer the rice over the cooked beef in the pot, add any optional saffron, fried onions, mint or coriander, cover tightly and cook on low heat (dum) for about 20–30 minutes until the rice finishes cooking and flavors meld.
