Rabeena Boiled Odiyal is a traditional Sri Lankan ingredient made from the tuber of the palmyra palm (Borassus flabellifer) that has been carefully boiled, prepared and dried to create firm, shelf-stable pieces. The finished product has a mild, slightly nutty and starchy flavor with a dense, chewy texture when rehydrated, making it versatile for both savory dishes and snacks. Naturally plant-based and gluten-free, boiled odiyal is valued for its complex carbohydrates and dietary fiber and is commonly used across Sri Lankan home cooking and street food. To use, rehydrate the odiyal by soaking in warm water for 30–60 minutes or by simmering gently for 10–15 minutes until tender, then drain and rinse. Store unopened in a cool, dry place; after opening, keep in an airtight container in a cool, dry area and refrigerate if your climate is humid to maintain texture and freshness.
