Patak's Tikka Marinade Paste is a vibrant, ready-to-use paste inspired by traditional Indian tikka marinades. To use, coat your chosen protein or vegetables evenly with the paste (roughly 1–2 tablespoons per 500g as a guide) and leave to marinate for at least 30 minutes or preferably several hours to overnight in the refrigerator for deeper flavour. Cook by grilling, baking, pan-frying or barbecuing until thoroughly done. For a quick tikka masala-style sauce, gently fry chopped onion, add the paste and cook briefly, then stir in tomato passata and a little yoghurt or cream and simmer before adding the cooked meat or vegetables.
