Patak’s Rogan Josh Curry Paste brings the aromatic, warming flavours of the classic Kashmiri rogan josh to your kitchen in a ready-to-use paste. It combines a blend of traditional Indian spices with tomato and red chilli notes to create a rich, fragrant base that works equally well with lamb, chicken or vegetables. The paste is designed to save preparation time while delivering a deep, robust curry character; it can be adjusted to taste by adding stock, tomatoes or cream/yogurt for a smoother sauce and pairs well with rice, naan or flatbreads.

To use, heat a little oil in a pan and brown your choice of meat or vegetables. Add roughly 2–3 tablespoons of paste for about 500g of meat or vegetables and fry briefly for a minute to release the aromas. Stir in a splash of water or stock (about 150–300ml) or chopped tomatoes to create a sauce, then simmer gently until the meat is cooked through and the flavours have blended, usually around 15–25 minutes depending on the ingredients. Finish with a little yogurt or cream if you prefer a milder, creamier sauce, and adjust seasoning before serving.
