The clarification process concentrates the characteristic buttery flavor while producing a product with a high smoke point (about 250°C / 480°F), making it ideal for high-heat cooking without burning. Ghee is composed mainly of stable saturated and monounsaturated fats and naturally contains fat‑soluble vitamins such as A, D, E and K. Because most milk solids are removed during preparation, ghee typically contains negligible amounts of lactose and casein compared with regular butter; however, individuals with severe milk allergies should consult product labeling or their healthcare provider before use.
