Enesar Sabja (Kasa Kasa) are premium sweet basil seeds (Ocimum basilicum) that appear as tiny black seeds which swell and develop a clear, jelly-like coating when soaked in liquid. Carefully cleaned and packaged, these seeds are widely used across South and Southeast Asia to add a cooling effect and a pleasant, chewy texture to drinks and desserts such as falooda, sherbets, smoothies and chilled puddings. Naturally gluten-free and low in calories, basil seeds are a good source of dietary fiber and contain minerals such as calcium, iron and magnesium. Traditionally valued in culinary and folk practices for their refreshing properties, sabja seeds are distinct from poppy seeds (khas-khas) and should not be confused with them.
To use, measure the desired amount of seeds and soak them in cold or room-temperature water or another liquid for 10–15 minutes until they swell and become gelatinous; a typical starting ratio is about 1 teaspoon to 1 cup of liquid, though you can adjust depending on the texture you want. Stir after soaking and add the swollen seeds directly to drinks, smoothies, yogurt, iced desserts or chilled sauces; avoid swallowing the seeds dry because they expand when they absorb liquid.
