Enesar Fenugreek contains fenugreek seeds (Trigonella foenum-graecum), a versatile spice and traditional herb used for centuries in South Asian, Middle Eastern and Mediterranean cuisines. Fenugreek seeds have a warm, bittersweet, slightly maple-like aroma (due to the compound sotolon) and a nutty, bitter flavor that mellows when roasted. They are commonly used whole for tempering, lightly roasted and ground into spice blends, or soaked and ground into pastes for culinary and topical applications. Nutritionally, fenugreek seeds are a source of soluble fiber and plant protein and provide minerals such as iron, magnesium and manganese as well as B vitamins and a range of phytonutrients including saponins and flavonoids. Traditionally fenugreek has been used as a culinary flavoring and as an herbal remedy; scientific studies have examined its effects on lactation, blood sugar regulation and digestion, but results vary and evidence is not uniform. Store fenugreek in an airtight container in a cool, dry, dark place to preserve flavor; whole seeds keep longer than ground powder, which is best used within months for peak aroma. People with allergies to legumes (such as peanuts or soy) may experience allergic reactions to fenugreek, and because fenugreek can affect blood glucose and interact with certain medications, pregnant or breastfeeding women and anyone on prescription medication should consult a healthcare professional before using fenugreek as a dietary supplement.
To use, add whole seeds to hot oil for tempering at the start of Indian-style dishes or lightly roast seeds for 1–2 minutes to reduce bitterness, then grind into powder for curries, dals, pickles and spice mixes; start with small amounts (for example a pinch to 1/2 teaspoon of ground fenugreek per dish) and adjust to taste. For a simple infusion, soak 1 teaspoon of seeds in a cup of water overnight and drink the strained liquid in the morning or simmer 1 teaspoon in a cup of water for 5–10 minutes for tea. For topical use on hair or skin, soak seeds until soft then blend into a paste, apply for 15–30 minutes and rinse thoroughly.
