Annam Pavakkai Vathal is made from fresh bitter gourd (Momordica charantia) that is carefully sliced and traditionally sun-dried to preserve its distinct, pleasantly bitter flavor and natural nutrients. The product captures the authentic taste and aroma of South Indian vatral (dried vegetables) and gives a crunchy, chewy texture when cooked or fried. Bitter gourd is valued in Indian cooking for its bold flavor and contribution of dietary fiber and micronutrients, and Pavakkai Vathal is a convenient, shelf-stable way to enjoy that flavor year-round. Packaged for everyday use, it is ideal for making traditional curries, stir-fries and tempering-based side dishes that pair well with rice, dosa or roti.
To use, briefly rinse the vathal to remove any surface dust and, if you prefer a softer texture, soak in warm water for about 10–20 minutes and drain. For a simple curry or dry stir-fry, heat a little oil, add mustard seeds, urad dal (optional), curry leaves and dried red chilies, sauté sliced onion until translucent, then add the drained pavakkai vathal with a pinch of turmeric and salt; cover and cook on medium heat for about 8–12 minutes until the vathal is tender and has absorbed the spices. For a tangy gravy, add a little tamarind extract or chopped tomato and simmer until the flavors meld. Alternatively, deep-fry the dried slices until crisp for a crunchy accompaniment or snack. Store unused vathal in an airtight container away from moisture to maintain freshness.
